Siwawa, or vegetarian spring rolls, is a beloved local snack of Guiyang city, southwest China’s Guizhou Province. It’s composed of different kinds of shredded vegetables accompanied with flour pancakes.
Unlike traditional dishes, siwawa is a do-it-yourself specialty. Diners are served paper-thin pancakes, tantalizing dipping sauce, and a tray of freshly trimmed vegetables, such as radish, cucumber, tofu, seaweed and pickled turnip. Then, you pick up and stack an assortment of vegetables into a pancake. Cover them in distinct local spicy sauce before enjoying it.
Rich in color and flavor, the snack has become a favorite among locals of Guiyang.
